This cake was for the same customer as my Bloody Delicious creation; except this time the brief was the complete opposite! Bright, spring-like colours and light citrus flavours. I immediately knew that a pastel watercolour theme would be perfect, along with some chocolate brushstrokes made from tempered white chocolate; a new technique I’d been very keen to try!

The cake itself was a gluten-free citrus sponge, filled with homemade lemon curd and vanilla Italian meringue buttercream. I mixed up five lovely pastel shades and had great fun creating the watercolour effect with some gold splatters (of course). Finished off with the beautiful brushstrokes, crushed pastel chocolate pieces, mini eggs and some sparkle, I think this cake is the perfect way to welcome back Spring!
