This was a complete wing-it type experiment (just for our consumption I might add, I’m much less gung-ho when it comes to orders I assure you!). I’d been seeing rectangular cakes on Insta for a while and thought they added a bit of drama compared to the usual round cake. This one is made up of four layers of the fudgiest almond blondie, filled with raspberry jam, almond buttercream and white chocolate ganache. Topped with a jammy ganache drip and fresh fruits, with some glitter for added sparkle.
Not all of my experiments work, but I’m glad to say this one was a resounding success! I shall very happily create more rectangle cakes - they serve a similar number of people to the round ones (10-12 very generous portions) and are something a little different!
